Vegan Mango Lassi

Ingredients:
400g tinned organic mango pulp
1/2 cup plain coconut yoghurt
1/4 cup (65ml) ‘mylk’ alternative (eg, coconut, almond, rice, soy, oat, soy)
2 cups ice cubes
pistachio nuts to garnish
mint to garnish

Optional Extras to Spice Things Up:
¼ teaspoon ground cardamom
¼ teaspoon ground cinnamon
1 tsp maple syrup if sweetening is required

Pour all ingredients into your blander jug and crush ice, then blend until completely smooth.

Serves 4
