Savour Organic Cultured Aged Nut Cheeses 

At Wise Cicada we love seeing passionate, talented local people create healthy new artisan food products for you. We’ve watched Auda, the product/brand creator and conscious businesswoman behind the delicious ‘Savour’ organic, cultured nut cheeses develop her range  into stores over the past year and rate her product and the quality and ethics behind it very highly.

Auda says, ‘Savour supports the movement towards a plant based diet for health, environmental and ethical reasons. My mission is simply to produce delectable and tempting plant-based foods………Being a mother has developed in me a greater sense of compassion. As a parent, we all want to do the right thing to make our children’s lives happy. For me, this includes not only healthy eating but guarding their future environment as well. Eating a healthy plant based diet is not only beneficial for bodies, it is the only sustainable way we can feed the human race without mass destruction of our planet and all its inhabitants.’

Each nut cheese is individually crafted and aged in a cheese cave by an artisan cheesemaker. Auda and her production team operate out of a small commercial kitchen, surrounded by a large organic garden in Sandringham, Auckland. Each cheese starts life as a purée of nuts activated in filtered water, then a vegan probiotic is added and it is left to ferment until the right acidity level is reached. The mixture is then given more character with flavourings, moulded into rounds and left to age in a cheese cave to mature and develop its depth of flavour.

… and in case you needed an excuse to enjoy this cheese regularly, with each mouthful savoured you are also nourishing your gut with good flora, via the vegan probiotics and culturing/aging process.

‘Savour’ cheeses use ethically produced vegan ingredients that are organic and locally sourced where possible. The consumables used in the production and packaging are also carefully selected for their low environmental impact. Parchment wrappers can be re-used in baking and are also compostable.

SMOKEY CHIPOTLE
An aged, firm textured cheese made from cashew and macadamia nuts. Flavoured with New Zealand grown, manuka cold-smoked jalapeño chilies.

CHEDDAR
An aged, firm cashew cheese. Simple yet classic.

CASHETA
Creamy yet firm, this cashew cheese has the tang of a good feta. An organic olive oil infusion adds a melt-in-the-mouth quality to this cheese.

EL BORACHO
An aged, firm textured cashew and macadamia nut cheese that has been fermented in an organic vegan craft beer.

TOASTED CUMIN AND PEPPER
An aged cashew and macadamia nut cheese, delicately flavoured with cumin and pepper which have been gently toasted to release their aromatic qualities.
