Salted Caramel Maca Slice
150g (1 cup) raw cashews, soaked for a couple of hours or overnight, then drained
5 Medjool dates, pitted and soaked for 15 mins in 125mls (1/2 cup) recently boiled water
200ml coconut cream
1 Tbsp gelatinized Seleno Health maca powder
1 tsp vanilla powder
1/4 tsp Himalayan salt
100g raw cacao butter, melted
– Line a small tin with waxed paper. (A brownie tray is a good option – or you can use single spring form moulds/tins).
– Grind the almonds into a flour texture in a food processor.
– Add the cacao powder, dates and vanilla powder. Blitz until moist and a fine crumble forms. Press this into the lined tin.
Place cashews, coconut cream, maca powder, vanilla powder, salt and dates (including the water that your dates were soaked in) into the food processor. Blend for a minute or two on a high speed. It should become silky smooth. Then pour in the melted cacao butter and blend until well combined.
