Get the Recipe: Coriander ‘Detox’ Pesto

Parsley and coriander (cilantro) are powerful green plant foods that are useful for promoting detoxification of heavy metals from the body. Try this coriander based pesto on a daily basis to help combat heavy metal accumulation.

Unfortunately our modern lives regularly pose us with risk for toxin and heavy metal pollutant contamination. Our water supplies, food chain, air, amalgam fillings and the products we use on our bodies and for cleaning may all contribute to an overload of toxic metals and chemicals that our body will accrue throughout life.

Heavy metals can accumulate in the internal organs, tissues and bones which can cause long term adverse health affects. Our body cannot eliminate heavy metals without help, only chelates (agents that bind heavy metals) can remove them from the body.  Synthetic chelates can have side effects, however Coriander has recently been researched as a natural chelate.

In 1995 a doctor named Yoshiaki Omura noticed a large amount of mercury in the urine of a patient. It was deduced that the patient had consumed Vietnamese soup with coriander. Intrigued, Dr. Omura began to explore the effect of coriander on heavy metals. His studies confirmed that coriander removes not only mercury, but also many other heavy metals from the body.

– 3 cloves garlic
– 1/3 cup Brazil nuts (providing selenium) or macadamia nuts
– 1/3 cup sunflower seeds (providing cysteine)
– 1/3 cup pumpkin seeds (providing zinc & magnesium)
– 1 cup fresh cilantro (coriander)
– 1 cup parsley
– 2/3 cup cold pressed olive oil
– 4 tablespoons lemon juice (providing Vitamin C)

Soak the seeds and nuts overnight to release their enzyme inhibitors.

Process the parsley, cilantro (coriander) and olive oil in a blender until chopped. Then add garlic, drained nuts, and seeds, salt and lemon juice, mix until finely blended into a paste. Store in dark glass jar in the fridge. It will also freeze well.
