Recipe from Our Chef’s Diary – Mint Choc Chip Ice Cream

Vegan Mint / Choc Chip Ice Cream

Summer is fast approaching, so we thought we’d share a few simple, yet delicious vegan ice cream recipes from the Wise Cicada Kitchen.

4 x 400ml Cans of Organic Coconut Cream (chilled)
12 x Tablespoons of Agave
1 x Teaspoon Mint Extract
4 x Drops Green Food Colouring or Natural green
colouring (spinach juice etc)
1/2 Cup of Vegan Chocolate Chips

Place Coconut Cream, Agave, Mint Extract & Natural Food
Colouring in a chilled bowl, mix using a hand
mixer for 2-3 mins until it becomes stiff & fluffy.
Add Chocolate Chips & gently stir through.
Transfer to a container & freeze for at least 2 hrs
